Biltong is a heritage from South Africa's Dutch forefathers. In the Netherlands it was called Tassal. These are strips of meat that are salt cured and flavoured with coriander seeds and black pepper corns. It is then soaked in vinegar and hung to dry. In the days of the pioneers or Voortrekkers this method of curing or preserving their meat was a necessity because they were always on the move and had no refrigeration. This process has been handed down from generation to generation and is now considered a South African delicacy. Almost all meats can be preserved in this manner and the popular ones are most cuts of beef and ostrich and all types of antelope and venison. Our Forefathers also dried their sausage meat in this way, Droewors. These days Biltong and Droewors is synonymous with camping, hiking all sport events especially rugby and cricket. This high protein, zero carbohydrate, snack is enjoyed everywhere; at the office, party's and get-togethers, braai/ barbecues and is complimented with beer and wine.
